Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric (or 1 tbsp fresh grated)
- 1/2 teaspoon black pepper, freshly ground
- 1 tablespoon Dijon mustard
- 1–2 teaspoons maple syrup or honey (optional, to taste)
- 2–4 tablespoons water (to thin)
Instructions
- Combine Wet Ingredients: In a small bowl or blender, combine the extra virgin olive oil, apple cider vinegar, Dijon mustard, and maple syrup (if using).
- Add Aromatics & Spices: Add the grated fresh ginger, minced garlic, ground turmeric, and black pepper.
- Whisk or Blend: Whisk vigorously or blend on high for 30-60 seconds until all ingredients are well combined and the dressing is smooth and emulsified.
- Adjust Consistency & Taste: Gradually add water, 1 tablespoon at a time, until the dressing reaches your desired pourable consistency. Taste and adjust seasonings as needed (more tang, sweetness, or spice).
- Serve & Store: Drizzle over your favorite salads or grain bowls immediately, or store in an airtight container in the refrigerator for up to 5-7 days. Shake well before each use.
