A vibrant and invigorating homemade tonic featuring the zesty kick of fresh ginger and the tangy brightness of apple cider vinegar. This customizable elixir is perfect for a refreshing pick-me-up.
Ingredients
- 1 large piece (about 4-inch) fresh ginger, peeled and thinly sliced
- 2 cups filtered water
- 2–4 tablespoons honey or maple syrup (adjust to taste)
- 1/2 cup organic apple cider vinegar ‘with the mother’
Instructions
- 1. Prep the Ginger: Wash and peel the fresh ginger using the back of a spoon. Thinly slice the ginger to maximize flavor extraction.
- 2. Simmer Ginger & Sweetener: In a medium saucepan, combine the sliced ginger, filtered water, and your chosen sweetener. Bring to a gentle simmer over medium heat.
- 3. Infuse: Reduce heat to low, cover, and let the mixture infuse for 15-30 minutes for optimal ginger flavor. The longer it steeps, the spicier it will be.
- 4. Strain & Combine: Remove from heat and carefully strain the ginger-infused water into a clean, heatproof jar or pitcher, discarding the ginger solids. Allow to cool completely to room temperature. Once cooled, stir in the apple cider vinegar until well combined.
- 5. Serve & Store: Serve immediately over ice, diluted with sparkling water, or gently warmed. Store any remaining elixir in an airtight container in the refrigerator for up to 1 week.
