Ingredients
- 1 ½ cups (180g) all-purpose gluten-free flour blend (with xanthan gum)
- ½ teaspoon fine sea salt
- ½ teaspoon onion powder
- ¼ teaspoon paprika
- 1 ½ cups (170g) sharp cheddar cheese, finely shredded
- ½ cup (113g) unsalted butter, very cold and cubed
- 2–4 tablespoons ice water
Instructions
- 1. Prepare Dough: In a food processor, combine flour, salt, onion powder, and paprika. Pulse. Add cheese and pulse until fine crumbs. Add cold butter, pulse until mixture resembles wet sand. Add ice water 1 tbsp at a time, pulsing until dough forms a ball.
- 2. Roll Thin: Divide dough in half. Roll each half between two sheets of parchment paper to 1/16-inch thickness.
- 3. Cut Shapes: Use a small cookie cutter (goldfish shape recommended) to cut out crackers. Transfer to parchment-lined baking sheets.
- 4. Bake: Preheat oven to 350°F (175°C). Bake for 12-18 minutes, or until golden brown and firm.
- 5. Cool: Transfer baked crackers to a wire rack to cool completely for maximum crispness.
