Ingredients
- 6 cups certified gluten-free rice cereal
- 1 (10 ounce) bag mini marshmallows (ensure gluten-free)
- 3 tablespoons unsalted butter (or vegan butter substitute)
- 1 teaspoon pure vanilla extract (ensure gluten-free)
- Optional: Gluten-free chocolate chips, sprinkles, or other add-ins
Instructions
- 1. Prepare Your Pan: Lightly grease a 9×13 inch baking pan or line with parchment paper, leaving an overhang for easy removal.
- 2. Melt Butter and Marshmallows: In a large, heavy-bottomed pot over low heat, melt the butter. Add marshmallows and stir constantly until completely smooth. Remove from heat.
- 3. Combine with Cereal: Stir in vanilla extract. Add certified gluten-free rice cereal to the marshmallow mixture and gently fold with a rubber spatula until evenly coated.
- 4. Press and Cool: Transfer mixture to the prepared pan. Using lightly greased hands or parchment, gently press the mixture evenly into the pan. Allow to cool completely at room temperature (1-2 hours) before cutting into squares. Do not refrigerate.
