Description

Whip up these naturally sweet and incredibly soft banana pancakes, perfect for little hands exploring baby-led weaning. A nutrient-dense, easy-to-make breakfast or snack that the whole family will adore.


Ingredients

  • 2 very ripe medium bananas, mashed
  • 1 large egg
  • 1/4 cup milk (breastmilk, formula, cow’s milk, or plant-based)
  • 1/2 cup oat flour (or rolled oats blended into flour)
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon (optional)
  • Coconut oil or unsalted butter for cooking

Instructions

  • In a medium bowl, mash the ripe bananas thoroughly with a fork until smooth.
  • Add the egg and milk to the mashed bananas and whisk until well combined.
  • Stir in the oat flour, baking powder, and optional cinnamon until just combined. Do not overmix.
  • Heat a non-stick pan or griddle over low to medium-low heat. Add a tiny amount of coconut oil or butter.
  • Spoon 1-2 tablespoons of batter per pancake onto the pan. Cook for 2-3 minutes, until bubbles appear on the surface and edges are set.
  • Flip and cook for another 1-2 minutes, until golden brown and cooked through.
  • Let cool slightly before cutting into appropriate sizes and serving to your baby.
