Ingredients
- 2 very ripe medium bananas, mashed
- 1 large egg
- 1/4 cup milk (breastmilk, formula, cow’s milk, or plant-based)
- 1/2 cup oat flour (or rolled oats blended into flour)
- 1/2 tsp baking powder
- 1/4 tsp cinnamon (optional)
- Coconut oil or unsalted butter for cooking
Instructions
- In a medium bowl, mash the ripe bananas thoroughly with a fork until smooth.
- Add the egg and milk to the mashed bananas and whisk until well combined.
- Stir in the oat flour, baking powder, and optional cinnamon until just combined. Do not overmix.
- Heat a non-stick pan or griddle over low to medium-low heat. Add a tiny amount of coconut oil or butter.
- Spoon 1-2 tablespoons of batter per pancake onto the pan. Cook for 2-3 minutes, until bubbles appear on the surface and edges are set.
- Flip and cook for another 1-2 minutes, until golden brown and cooked through.
- Let cool slightly before cutting into appropriate sizes and serving to your baby.
