Ingredients

  • 1 lb lean ground beef, cooked and well-drained
  • 1/2 cup finely diced onion (or 1/4 cup dried onion flakes)
  • 1/4 cup finely diced celery (or 2 tbsp dried celery flakes)
  • 2 tbsp minced garlic (or 1 tbsp garlic powder)
  • 1/4 cup fine-grain sea salt
  • 2 tbsp nutritional yeast
  • 1 tbsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp ground bay leaf
  • 1/2 tsp black pepper

Instructions

  • Step 1: Prep Ingredients. Cook ground beef until browned and crumbly, draining all fat. If using fresh aromatics, finely dice them.
  • Step 2: Combine. In a large bowl, mix cooked beef, diced/dried aromatics, salt, nutritional yeast, smoked paprika, thyme, bay leaf powder, and black pepper. Mix thoroughly until evenly combined.
  • Step 3: Dehydrate. Spread the mixture thinly on parchment-lined baking sheets (oven at 150-175°F with door slightly ajar) or dehydrator trays (125°F). Dry until completely brittle and no moisture remains (4-12 hours depending on method and moisture content).
  • Step 4: Granulate. Once cooled and bone dry, transfer the brittle mixture to a powerful blender or spice grinder. Process until a fine, uniform powder/granule forms.
  • Step 5: Cure & Store. Spread the granules on a clean tray and air dry for another 12-24 hours to ensure all moisture is gone. Store in an airtight container in a cool, dark place for up to 6-12 months.
