Ingredients

  • 4 cups (960ml) high-quality, low-sodium beef broth or homemade beef stock
  • 1/4 cup (15g) nutritional yeast
  • 2 tablespoons low-sodium soy sauce (or tamari for gluten-free)
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • Salt to taste (starting with 1/2 teaspoon, adjust as it reduces)

Instructions

  • 1. Combine Ingredients: In a large, heavy-bottomed pot or Dutch oven, combine beef broth, nutritional yeast, soy sauce, onion powder, garlic powder, dried thyme, dried rosemary, black pepper, and initial salt. Stir well to combine.
  • 2. Simmer and Reduce: Bring the mixture to a gentle simmer over medium-high heat. Once simmering, reduce the heat to low and continue to simmer, uncovered, for 1.5 to 3 hours. Stir occasionally to prevent sticking. The goal is to reduce the liquid by about two-thirds to three-quarters, until it becomes a thick, syrupy paste. Taste and adjust salt as it reduces, as flavors will intensify.
  • 3. Cool and Store: Remove from heat and allow the concentrate to cool completely. It will thicken further as it cools. Transfer to an airtight container for refrigerator storage (up to 2-3 weeks) or portion into ice cube trays and freeze for longer storage (up to 3-4 months).
  • 4. How to Use: Dissolve 1-2 teaspoons of the concentrate in 1 cup of hot water for a liquid broth, or add directly to stews, gravies, sauces, or marinades for an instant flavor boost.
