Ingredients
- 1.5 lbs beef (sirloin, ribeye, or tenderloin), cut into 1-inch cubes
- 1/2 cup soy sauce
- 1/4 cup mirin
- 2 tbsp sake (Japanese cooking wine)
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp granulated sugar
- 2 scallions, thinly sliced (for garnish)
- 1 tsp sesame seeds, toasted (for garnish)

Instructions
- 1. Prepare the Beef: Trim beef and cut into uniform 1-inch cubes. Place in a bowl.
- 2. Mix the Marinade: In a separate bowl, whisk together soy sauce, mirin, sake, ginger, garlic, and sugar until sugar dissolves.
- 3. Marinate the Beef: Pour marinade over beef, toss to coat. Cover and refrigerate for 30 minutes to 4 hours. Soak bamboo skewers in water if using.
- 4. Thread the Skewers: Thread beef onto skewers, leaving small gaps for even cooking.
- 5. Grill or Broil: Preheat grill to medium-high or broiler to high. Cook skewers 2-3 minutes per side until seared and desired doneness.
- 6. Glaze and Serve: During the last minute, brush with remaining (boiled) marinade. Rest 3-5 minutes, then garnish with scallions and sesame seeds.
