Ingredients

  • 2 tbsp olive oil
  • 2 lbs boneless beef chuck roast, cut into 1.52 inch cubes
  • 1/4 cup all-purpose flour (or gluten-free flour blend)
  • 1 large yellow onion, diced
  • 2 carrots, chopped (plus 12 more for later addition, optional)
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 cups beef broth (low sodium, high quality)
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1.5 lbs Yukon Gold or red potatoes, peeled and diced
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  • Step 1: Prep Ingredients. Dice onion, carrots, celery. Mince garlic. Cut beef into 1.5-2 inch cubes, pat dry, season with salt and pepper, then dredge lightly in flour.
  • Step 2: Sear Beef. Heat olive oil in a Dutch oven over medium-high heat. Sear beef in batches until deeply browned on all sides. Remove to a plate.
  • Step 3: Build Aromatics. Reduce heat to medium. Add onion, carrots, and celery to the pot; sauté 5-7 minutes until softened. Add garlic and tomato paste; cook 1-2 minutes until fragrant.
  • Step 4: Deglaze and Add Liquids. Deglaze with a splash of beef broth, scraping up browned bits. Return beef to pot. Add remaining beef broth, Worcestershire, bay leaves, thyme, and rosemary. Bring to a gentle simmer.
  • Step 5: Simmer for Tenderness. Reduce heat to low, cover, and simmer 1.5-2 hours, or until beef is fork-tender.
  • Step 6: Add Vegetables & Thicken. Add potatoes and additional carrots (if using). Simmer, uncovered, for 20-30 minutes until vegetables are tender. If desired, mix 1 tbsp cornstarch with 1 tbsp cold water, stir into stew, and cook 2 minutes until thickened.
  • Step 7: Final Seasoning & Rest. Remove bay leaves. Taste and adjust salt and pepper. Add a pinch of sugar if needed. Let rest 10-15 minutes before serving. Garnish with fresh parsley.
