Ingredients
- 3–4 lb boneless beef chuck roast, patted dry
- 1 tbsp high-smoke-point oil (canola, avocado)
- 1 large yellow onion, chopped
- 4–5 cloves garlic, minced
- 3–4 cups beef broth or stock
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and freshly ground black pepper, to taste
- Optional: 1/2 cup red wine or beer
- Optional: 1-2 bay leaves
Instructions
- 1. Prepare and Season Beef: Pat the chuck roast dry. Trim excess large fat. Generously season all sides with salt, pepper, smoked paprika, garlic powder, and onion powder.
- 2. Sear the Beef: Heat oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Sear beef for 3-5 minutes per side until deeply browned. Remove and set aside.
- 3. Sauté Aromatics: Reduce heat to medium. Add chopped onion and sauté until softened (5-7 mins), scraping up browned bits. Add minced garlic and cook for 1 minute until fragrant.
- 4. Add Liquid: Pour in beef broth (and optional wine/beer). Bring to a simmer, stirring. Return seared beef to the pot, ensuring it’s partially submerged. Add bay leaves if using.
- Slow Cooker: Cook on low for 6-8 hours or high for 3-4 hours.
- Oven: Cover and bake at 300°F (150°C) for 3-4 hours.
- Instant Pot: Pressure cook on high for 60-70 minutes, followed by natural release.
- 6. Shred and Serve: Remove beef from pot and let rest 10-15 minutes. Shred with two forks, discarding large fat pieces. Return shredded beef to the cooking liquid, stir to coat, and taste for seasoning. Serve warm.
