Ingredients
- 1 lb boneless, skinless chicken thighs (or breast), cut into bite-sized pieces
- 12 oz thick Asian-style noodles (udon, lo mein, or wide rice noodles)
- 8–10 cloves garlic, minced
- 3 tbsp soy sauce (low sodium preferred)
- 2 tbsp oyster sauce (or vegetarian oyster sauce)
- 1 tbsp brown sugar (or honey)
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- ½ tsp red chili flakes (optional, adjust to taste)
- 2 tbsp vegetable oil (or preferred cooking oil)
- ¼ cup chopped green onions, for garnish
- 1 tbsp toasted sesame seeds, for garnish (optional)
- ½ cup reserved noodle water (optional)
Instructions
- Step 1: Prepare Ingredients: Mince garlic, slice chicken, and measure out all sauce ingredients.
- Step 2: Cook Chicken: Heat 2 tbsp oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and cook for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.
- Step 3: Boil Noodles: Cook noodles according to package directions in salted boiling water until al dente. Drain, reserving ½ cup noodle water.
- Step 4: Make Sauce: Reduce heat to medium-low. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant. Whisk in soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, and chili flakes (if using). Simmer gently until sugar dissolves.
- Step 5: Combine & Toss: Add cooked chicken and drained noodles to the skillet with the sauce. Toss vigorously to coat everything. Add reserved noodle water a tablespoon at a time if sauce is too thick.
- Step 6: Garnish & Serve: Transfer to bowls, garnish with green onions and sesame seeds, and serve hot immediately.
