Ingredients

  • 1.52 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey or maple syrup
  • 4 cloves garlic, minced
  • 1/2 medium onion, diced
  • 1/4 cup chicken broth (gluten-free if needed)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water (for slurry)
  • Optional: Fresh parsley or chives for garnish

Instructions

  • Pat chicken dry and season with salt and pepper. Place in slow cooker.
  • In a bowl, whisk balsamic vinegar, honey/maple syrup, minced garlic, diced onion, and chicken broth.
  • Pour sauce over chicken in the slow cooker.
  • Cook on LOW for 3-4 hours or HIGH for 2-3 hours, until chicken is tender (165°F).
  • Remove chicken to a plate. In a small bowl, whisk cornstarch and cold water to form a slurry.
  • Stir slurry into the sauce in the slow cooker. Cook on HIGH for 15-20 minutes, stirring, until thickened.
  • Shred or slice chicken, then return to the sauce, tossing to coat.
  • Serve immediately with your favorite sides and garnish if desired.
