Ingredients
- 1.5–2 lbs boneless, skinless chicken breasts or thighs
- 1/2 cup balsamic vinegar
- 1/4 cup honey or maple syrup
- 4 cloves garlic, minced
- 1/2 medium onion, diced
- 1/4 cup chicken broth (gluten-free if needed)
- Salt and freshly ground black pepper to taste
- 2 tablespoons cornstarch
- 2 tablespoons cold water (for slurry)
- Optional: Fresh parsley or chives for garnish
Instructions
- Pat chicken dry and season with salt and pepper. Place in slow cooker.
- In a bowl, whisk balsamic vinegar, honey/maple syrup, minced garlic, diced onion, and chicken broth.
- Pour sauce over chicken in the slow cooker.
- Cook on LOW for 3-4 hours or HIGH for 2-3 hours, until chicken is tender (165°F).
- Remove chicken to a plate. In a small bowl, whisk cornstarch and cold water to form a slurry.
- Stir slurry into the sauce in the slow cooker. Cook on HIGH for 15-20 minutes, stirring, until thickened.
- Shred or slice chicken, then return to the sauce, tossing to coat.
- Serve immediately with your favorite sides and garnish if desired.
