Ingredients
- 1–2 lbs chicken bones (carcasses, backs, necks, wings, or a mix)
- 1 large onion, quartered (skin on is fine)
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped
- 2–3 bay leaves
- 1 tsp whole black peppercorns
- Handful of fresh parsley stems (optional)
- 1 tbsp apple cider vinegar
- Cold filtered water (enough to cover ingredients)
Instructions
- Place chicken bones, onion, carrots, celery, bay leaves, peppercorns, parsley stems (if using), and apple cider vinegar into a large crock pot.
- Pour enough cold filtered water over the ingredients to just cover them, ensuring you leave 1-2 inches of headspace from the rim of the crock pot.
- Cover the crock pot with its lid and set it to the ‘LOW’ setting. Cook for 8-24 hours. The longer the cooking time on low, the more flavor and nutrients will be extracted.
- Once cooking is complete, carefully remove and discard all large solids (bones, vegetables, herbs) using tongs or a slotted spoon.
- Place a fine-mesh sieve (and optionally line with cheesecloth) over a large heatproof bowl or pot. Slowly pour the broth through the sieve to strain out any remaining small particles.
- Allow the broth to cool completely to room temperature before transferring it to airtight containers for refrigeration or freezing.
