These refreshing cucumber tuna boats are a perfect light and healthy meal or appetizer. Crisp cucumber halves are filled with a savory, creamy, and zesty tuna salad.
Ingredients
- 2 English cucumbers
- 2 (5-ounce) cans tuna in water or olive oil, drained well
- 1/2 cup mayonnaise (or light mayonnaise / Greek yogurt)
- 1/4 cup finely diced celery
- 2 tablespoons finely minced red onion
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh lemon juice
- Salt and freshly ground black pepper to taste
- Optional: Paprika or extra dill for garnish
Instructions
- Slice each English cucumber in half lengthwise. Using a spoon, gently scoop out the seeds from the center of each cucumber half. Place cut-side down on paper towels to drain excess moisture while preparing the filling.
- In a medium bowl, flake the drained tuna with a fork. Add mayonnaise, diced celery, minced red onion, chopped fresh dill, and lemon juice. Season with salt and pepper. Mix until well combined.
- Spoon the tuna filling into each prepared cucumber half.
- Garnish with a sprinkle of paprika or extra fresh dill, if desired. Serve immediately.
