Description

These refreshing cucumber tuna boats are a perfect light and healthy meal or appetizer. Crisp cucumber halves are filled with a savory, creamy, and zesty tuna salad.


Ingredients

  • 2 English cucumbers
  • 2 (5-ounce) cans tuna in water or olive oil, drained well
  • 1/2 cup mayonnaise (or light mayonnaise / Greek yogurt)
  • 1/4 cup finely diced celery
  • 2 tablespoons finely minced red onion
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Optional: Paprika or extra dill for garnish

Instructions

  • Slice each English cucumber in half lengthwise. Using a spoon, gently scoop out the seeds from the center of each cucumber half. Place cut-side down on paper towels to drain excess moisture while preparing the filling.
  • In a medium bowl, flake the drained tuna with a fork. Add mayonnaise, diced celery, minced red onion, chopped fresh dill, and lemon juice. Season with salt and pepper. Mix until well combined.
  • Spoon the tuna filling into each prepared cucumber half.
  • Garnish with a sprinkle of paprika or extra fresh dill, if desired. Serve immediately.
