Ingredients
- 4 whole turkey wings (about 3–4 lbs total)
- For the Brine:
- 4 cups water (hot)
- 4 cups ice water
- 1/4 cup Kosher salt
- 2 tbsp brown sugar
- 2 bay leaves
- 1 tsp whole black peppercorns
- 4 cloves garlic, smashed
- For the Rub:
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 1 tbsp olive oil
Instructions
- 1. Prepare the Brine: In a large pot, combine hot water, Kosher salt, brown sugar, bay leaves, peppercorns, and smashed garlic. Bring to a boil, stirring until salt and sugar dissolve. Remove from heat, add ice water, and let cool completely. Submerge turkey wings in the cooled brine, cover, and refrigerate for 4-6 hours.
- 2. Pat Dry & Season: Remove wings from brine, discard liquid, and pat wings thoroughly dry with paper towels. In a small bowl, mix smoked paprika, garlic powder, onion powder, thyme, rosemary, black pepper, and cayenne (if using). Drizzle wings with olive oil, then generously coat with the spice rub.
- 3. Preheat Oven & Arrange: Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Arrange seasoned turkey wings in a single layer on the rack, ensuring space between them.
- 4. Bake: Bake at 400°F (200°C) for 30 minutes. Reduce oven temperature to 325°F (160°C) and continue baking for 60-90 minutes, or until internal temperature reaches 175-180°F (80-82°C) and skin is deeply golden and crispy.
- 5. Rest: Transfer cooked wings to a platter, tent loosely with foil, and let rest for 10-15 minutes before serving.
