Homemade Gluten-Free Caesar Dressing

  • Total Time: 10 minutes
  • Yield: 1 cup (approx. 4 servings)

Description

Craft your own rich and tangy gluten-free Caesar dressing from scratch. This recipe ensures authentic flavor without any hidden gluten.

Ingredients

  • 1 large egg yolk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard (gluten-free)
  • 12 cloves garlic, minced or finely grated
  • 2 anchovy fillets, mashed (or 1/2 teaspoon anchovy paste)
  • 1/2 cup extra virgin olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: 1/2 teaspoon gluten-free Worcestershire sauce or tamari

Instructions

  • Step 1: Combine Base Ingredients. In a medium bowl, whisk together the egg yolk, lemon juice, Dijon mustard, minced garlic, mashed anchovies, salt, and pepper until thoroughly combined.
  • Step 2: Emulsify with Oil. Very slowly, drop by drop at first, begin to whisk in the olive oil. Once a stable emulsion starts to form (the mixture will thicken), you can add the oil in a thin, steady stream, whisking continuously until all the oil is incorporated and the dressing is creamy and emulsified.
  • Step 3: Season and Serve. Taste the dressing and adjust seasonings as needed. If using, whisk in gluten-free Worcestershire sauce or tamari. Use immediately or store in an airtight container in the refrigerator for up to 4 days.
