Description
This exquisite frozen bellini offers a perfect blend of sweet peach and crisp Prosecco, creating an ideal summer refreshment. It’s a delightful, slushy cocktail that’s incredibly easy to make at home.
Ingredients
- 2 cups (about 10–12 oz) frozen peach slices (IQF recommended)
- 1/2 cup cold dry brut Prosecco, plus more for adjusting consistency
- 1/2 oz peach schnapps or peach liqueur (optional, but recommended)
- 1/2 oz fresh lemon juice
- 1–2 tablespoons simple syrup, to taste (optional)
- Fresh peach slice or raspberry for garnish (optional)
Instructions
- 1. Prepare Ingredients: Ensure all ingredients are ready. Frozen peaches should be solid, and Prosecco should be pre-chilled.
- 2. Blend Base: In a powerful blender, combine frozen peaches, peach schnapps (if using), lemon juice, and 1/2 cup of Prosecco. Blend on low, then high, until smooth and slushy, using a tamper if needed.
- 3. Taste & Adjust: Sample a small amount. Add simple syrup if a sweeter taste is desired, or more lemon juice for tartness. Blend briefly to combine.
- 4. Finish & Serve: Add the remaining cold Prosecco to the blender and pulse gently a few times to incorporate without deflating the fizz. Pour immediately into chilled glasses and garnish as desired. Serve right away for the best experience.
