Description
Whip up these incredible garlic chicken noodles for a flavor-packed weeknight meal. Tender chicken and slurpable noodles coated in a rich, garlicky sauce will become a new family favorite.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 8 oz spaghetti, linguine, or egg noodles
- 2 tbsp high smoke point oil (avocado or canola)
- 6–8 cloves garlic, minced (about 2–3 tbsp)
- 1/2 cup chicken or vegetable broth
- 1/4 cup low-sodium soy sauce (or tamari for GF)
- 2 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp honey or light brown sugar
- 1/4 cup reserved noodle water (optional, for sauce consistency)
- 2 scallions, sliced, for garnish
- 1 tbsp toasted sesame seeds, for garnish
Instructions
- 1. Prep & Cook Noodles: Prepare all ingredients. Cook noodles according to package directions until al dente. Drain, reserving 1/2 cup noodle water, and set aside.
- 2. Sear Chicken: Heat oil in a large skillet over medium-high heat. Add chicken in a single layer; sear until golden brown and cooked through, 6-10 minutes. Remove and set aside.
- 3. Sauté Garlic: Reduce heat to medium, add minced garlic to the pan. Sauté for 30-60 seconds until fragrant, being careful not to burn.
- 4. Make Sauce: Pour in broth, soy sauce, vinegar, and honey/brown sugar. Bring to a simmer, scraping up browned bits. Simmer for 2-3 minutes.
- 5. Combine: Return chicken to the pan. Add cooked noodles. Toss everything together, adding reserved noodle water if sauce is too thick.
- 6. Garnish & Serve: Garnish with sliced scallions and sesame seeds. Serve immediately.
