Indulge in this fantastic gluten-free General Tso chicken, boasting perfectly crispy chicken coated in a luscious sweet, tangy, and spicy sauce. It’s an easy weeknight meal that tastes just like your favorite takeout, but without the gluten!
Ingredients
- 1.5 lbs boneless, skinless chicken thighs (or breast), cut into 1-inch pieces
- 2 tbsp gluten-free tamari (for marinade)
- 1 tsp rice vinegar (for marinade)
- Salt and black pepper to taste
- 1/2 cup gluten-free all-purpose flour blend
- 1/4 cup cornstarch
- 1 large egg
- 3–4 tbsp water (or dairy-free milk)
- 3–4 cups neutral oil for frying (peanut, canola, or vegetable)
- For the Sauce:
- 1/2 cup gluten-free tamari
- 1/4 cup rice vinegar
- 2 tbsp honey or maple syrup (or brown sugar)
- 1 tbsp cornstarch (mixed with 2 tbsp water for slurry)
- 1 tbsp fresh ginger, grated or minced
- 2 cloves garlic, minced
- 1/2 – 1 tsp dried red chili flakes (adjust to taste)
- 1 tsp sesame oil
- Optional: Green onions and sesame seeds for garnish
Instructions
- 1. Prep and Marinate Chicken: Cut chicken into 1-inch pieces. In a bowl, toss chicken with 2 tbsp gluten-free tamari, 1 tsp rice vinegar, salt, and pepper. Marinate for 15-20 minutes at room temp, or up to 1 hour refrigerated.
- 2. Prepare Batter: In a shallow bowl, whisk together gluten-free flour blend and 1/4 cup cornstarch. In another bowl, whisk egg with 3-4 tbsp water to make a wet batter. Dip each chicken piece into the wet batter, then coat thoroughly in the dry flour mixture.
- 3. Fry the Chicken: Heat 2-3 inches of oil in a large wok or heavy-bottomed pot to 350-375°F (175-190°C). Fry chicken in batches for 4-6 minutes, or until golden brown and cooked through. Remove to a wire rack set over paper towels.
- 4. Make the Sauce: In a small saucepan, combine 1/2 cup gluten-free tamari, 1/4 cup rice vinegar, honey/maple syrup, cornstarch slurry, ginger, garlic, and chili flakes. Bring to a simmer over medium heat, stirring, until thickened and glossy. Stir in sesame oil.
- 5. Combine and Serve: Add fried chicken back to the wok or a large bowl. Pour the sauce over the chicken and toss gently to coat evenly. Garnish with green onions and sesame seeds if desired, and serve immediately with rice.
