Ingredients

  • 1 cup (2 sticks / 226g) unsalted butter, cold and cubed
  • 1 cup (200g) granulated sugar
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 ½ cups (300g) gluten-free all-purpose flour blend (with xanthan gum)
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • Optional: gluten-free sprinkles for decoration

Instructions

  • In a large bowl, cream together cold butter and granulated sugar until light and fluffy (2-3 minutes).
  • Add egg yolk and vanilla extract; mix until smooth and fully incorporated.
  • In a separate bowl, whisk together gluten-free flour blend, baking powder, and salt. Gradually add to wet ingredients, mixing on low speed until just combined. Do not overmix.
  • Divide dough in half, flatten into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • On a lightly floured surface, roll out one disk of dough to 1/8-1/4 inch thickness. Cut out shapes with cookie cutters and transfer to prepared baking sheets.
  • Bake for 8-12 minutes, or until edges are lightly golden and centers are set. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
