Ingredients
- 4 (4-6 ounce) cube steaks or round steaks, pounded thin
- Salt and freshly ground black pepper, to taste
- 1 1/2 cups gluten-free all-purpose flour blend (without added xanthan gum)
- 1/4 cup cornstarch
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper (optional)
- 2 large eggs
- 1/2 cup milk or buttermilk (dairy-free milk for dairy-free option)
- 3–4 cups vegetable oil or shortening, for frying
- For the Gluten-Free Gravy:
- 3 tbsp pan drippings (from frying) or fresh vegetable oil
- 3 tbsp butter (dairy-free butter for dairy-free option)
- 3 tbsp gluten-free all-purpose flour blend
- 2 cups gluten-free beef broth
- 1/2 cup milk (dairy-free milk for dairy-free option)
- Salt and pepper, to taste
Instructions
- Prepare the Steaks: Pat the steaks completely dry with paper towels. Season generously with salt and pepper. If using round steak, pound to 1/4-inch thickness.
- Set Up Dredging Stations: In a shallow dish, whisk together 1 1/2 cups gluten-free flour, cornstarch, paprika, garlic powder, onion powder, cayenne (if using), 1 tsp salt, and 1/2 tsp pepper. In another dish, whisk eggs and 1/2 cup milk.
- Bread the Steaks: Dip each steak first into the flour mixture, pressing to coat. Then dip into the egg mixture, letting excess drip off. Finally, return to the flour mixture for a second coating, pressing firmly. Place breaded steaks on a wire rack to rest for 10-15 minutes.
- Fry the Steaks: Heat oil in a large cast-iron skillet to 350-375°F (175-190°C). Fry 1-2 steaks at a time for 3-5 minutes per side, or until golden brown and cooked through. Remove to a wire rack to drain. Keep warm in a low oven.
- Make the Gravy: Pour off all but 2-3 tbsp oil from the skillet, leaving fond. Add 3 tbsp butter and melt. Whisk in 3 tbsp gluten-free flour, cooking for 1-2 minutes to form a roux. Slowly whisk in beef broth, scraping up bits. Whisk until thickened, then stir in 1/2 cup milk. Season with salt and pepper.
