Ingredients

  • 8 oz (225g) gluten-free chow mein noodles (or wide rice noodles/GF spaghetti)
  • 1 tbsp sesame oil (plus more for noodles)
  • 1 tbsp high-smoke-point oil (e.g., avocado, grapeseed)
  • 1 lb (450g) boneless, skinless chicken breast or thighs, thinly sliced (or firm tofu/shrimp)
  • 1 small yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated or minced
  • 2 cups sliced cabbage
  • 1 cup julienned carrots
  • 1 red or yellow bell pepper, thinly sliced
  • 1 cup snap peas or broccoli florets
  • For the Sauce:
  • 1/4 cup gluten-free tamari (or coconut aminos)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar or maple syrup
  • 1 tsp cornstarch
  • 1/4 cup water or chicken/vegetable broth
  • Optional: Pinch of white pepper, chili flakes

Instructions

  • Cook gluten-free noodles according to package directions until al dente. Drain, rinse with cold water, and toss with a little sesame oil to prevent sticking. Set aside.
  • In a small bowl, whisk together all sauce ingredients: tamari, rice vinegar, brown sugar/maple syrup, cornstarch, and water/broth. Set aside.
  • Heat 1 tbsp high-smoke-point oil in a large wok or skillet over high heat. Add sliced chicken (or protein of choice) and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove from wok and set aside.
  • Add onion to the wok and stir-fry for 1 minute. Add minced garlic and ginger and stir-fry for another 30 seconds until fragrant.
  • Add harder vegetables (cabbage, carrots, bell pepper) and stir-fry for 2-3 minutes until they start to soften but are still crisp. Add snap peas and stir-fry for 1 minute.
  • Give the sauce a quick whisk again and pour into the wok with the vegetables. Cook, stirring, until the sauce thickens and coats the vegetables, about 1-2 minutes.
  • Return the cooked chicken and prepared noodles to the wok. Toss everything together using tongs or two spatulas, ensuring the noodles, protein, and vegetables are evenly coated in the sauce. Cook for another 1-2 minutes until heated through and well combined.
  • Taste and adjust seasoning if needed (add more tamari for saltiness, or a splash of rice vinegar for brightness). Serve immediately and enjoy your delicious gluten free chow mein!
