Ingredients
- 1 to 1.5 lbs cooked lobster meat (tail, claw, knuckle), roughly chopped
- 1/2 cup mayonnaise (high-quality recommended)
- 1/4 cup finely diced celery
- 1–2 tbsp fresh lemon juice, to taste
- 2 tbsp fresh chives, finely chopped
- Salt and freshly ground black pepper, to taste
- 4 gluten-free hot dog buns
- 2–3 tbsp unsalted butter, for toasting
Instructions
- 1. Prepare the Lobster: If using pre-cooked, gently drain and chop into bite-sized pieces. If cooking live, follow preferred method (boil/steam), cool, pick meat, and chop.
- 2. Make the Filling: In a bowl, combine lobster, mayo, celery, lemon juice, chives, salt, and pepper. Gently fold until combined.
- 3. Chill: Cover and refrigerate filling for at least 30 minutes to allow flavors to meld.
- 4. Toast Buns: Melt butter in a skillet over medium heat. Toast gluten-free buns, split side down, until golden and slightly crisp (2-3 minutes).
- 5. Assemble: Spoon generous amounts of chilled lobster filling into warm, toasted buns. Serve immediately.
