Ingredients
- 1 lb gluten-free pasta (penne, ziti, or rotini)
- 2 tbsp olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 6 oz can tomato paste
- 28 oz can diced tomatoes (fire-roasted or plain)
- 2 cups vegetable or chicken broth
- 2 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil or parsley, chopped (for garnish)
Instructions
- 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add gluten-free pasta and cook 2-3 minutes less than package directions for al dente. Drain well and set aside.
- 2. Sauté Aromatics: In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat. Add onion and cook until softened, about 5-7 minutes. Stir in garlic and tomato paste; cook for 1 minute until fragrant.
- 3. Simmer Sauce: Pour in diced tomatoes, broth, Italian seasoning, and red pepper flakes (if using). Bring to a simmer, then reduce heat and cook for 10-15 minutes, allowing flavors to meld. Season with salt and pepper.
- 4. Combine and Assemble: Preheat oven to 375°F (190°C). Stir the cooked pasta into the sauce until well coated. Transfer to a 9×13 inch baking dish if not using an oven-safe skillet. Sprinkle evenly with mozzarella and Parmesan cheeses.
- 5. Bake: Bake for 20-25 minutes, or until the sauce is bubbly and the cheese is melted and golden brown. For an extra crispy top, broil for 1-2 minutes, watching carefully.
