  • 3 cups low-sodium chicken or vegetable broth (plus more if needed)
  • 2 tsp dried sage (or 2 tbsp fresh, chopped)
  • 1 tsp dried thyme (or 1 tbsp fresh, chopped)
  • ½ tsp dried rosemary (or ½ tbsp fresh, chopped and minced)
  • 1 tsp poultry seasoning
  • Salt and freshly ground black pepper, to taste
  • ¼ cup fresh parsley, chopped (for garnish, optional)
  • Optional add-ins: cooked crumbled sausage, sautéed mushrooms, dried cranberries

Instructions

  • 1. Prep Your Gluten-Free Bread: Cube gluten-free bread into ½-¾ inch pieces. Dry them out by leaving them on a baking sheet overnight or toasting them in a 300°F (150°C) oven for 10-15 minutes, until lightly golden and firm.
  • 2. Sauté the Aromatics: In a large skillet or Dutch oven over medium heat, melt butter. Add diced onion and celery; cook until softened (5-7 mins). Add minced garlic; cook for 1 minute until fragrant.
