Ingredients
- 1 (12-16 oz) loaf sturdy gluten-free sandwich bread, cut into ½-¾ inch cubes (about 8–10 cups)
- ½ cup unsalted butter (or dairy-free butter/olive oil)
- 1 large yellow onion, finely diced
- 4 stalks celery, finely diced
- 3 cloves garlic, minced
- 3 cups low-sodium chicken or vegetable broth (plus more if needed)
- 2 tsp dried sage (or 2 tbsp fresh, chopped)
- 1 tsp dried thyme (or 1 tbsp fresh, chopped)
- ½ tsp dried rosemary (or ½ tbsp fresh, chopped and minced)
- 1 tsp poultry seasoning
- Salt and freshly ground black pepper, to taste
- ¼ cup fresh parsley, chopped (for garnish, optional)
- Optional add-ins: cooked crumbled sausage, sautéed mushrooms, dried cranberries
Instructions
- 1. Prep Your Gluten-Free Bread: Cube gluten-free bread into ½-¾ inch pieces. Dry them out by leaving them on a baking sheet overnight or toasting them in a 300°F (150°C) oven for 10-15 minutes, until lightly golden and firm.
- 2. Sauté the Aromatics: In a large skillet or Dutch oven over medium heat, melt butter. Add diced onion and celery; cook until softened (5-7 mins). Add minced garlic; cook for 1 minute until fragrant.
- 3. Combine Wet and Dry Ingredients: Add dried bread cubes to the skillet. Pour in broth and sprinkle in dried herbs, poultry seasoning, salt, and pepper. Toss gently until bread is evenly moistened.
- 4. Cook on the Stovetop: Cover the skillet, reduce heat to low, and cook for 10-15 minutes, stirring once or twice, until liquid is absorbed and stuffing is heated through. Fluff with a fork and serve.
