Ingredients
- 1 pound elbow macaroni or other short pasta
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 3 cups whole milk
- ½ cup heavy cream
- 5 ounces fresh goat cheese (chevre), crumbled
- 4 ounces sharp cheddar cheese, shredded
- 4 ounces Gruyere cheese, shredded
- 1 teaspoon salt
- ½ teaspoon black pepper
- Pinch of freshly grated nutmeg
- ½ cup panko breadcrumbs (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta al dente according to package directions; drain and set aside.
- Melt butter in a large pot over medium heat, then whisk in flour to form a roux. Cook for 1-2 minutes.
- Gradually whisk in milk and cream until thickened and simmering.
- Remove from heat, stir in goat cheese, cheddar, Gruyere, salt, pepper, and nutmeg until melted and smooth.
- Add cooked pasta to the cheese sauce, stirring to coat.
- Pour into a lightly buttered 9×13-inch baking dish. Sprinkle with panko breadcrumbs if desired.
- Bake for 20-25 minutes, or until bubbly and golden. Broil for 2-3 minutes for an extra crispy top.
