  • 5 ounces fresh goat cheese (chevre), crumbled
  • 4 ounces sharp cheddar cheese, shredded
  • 4 ounces Gruyere cheese, shredded
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Pinch of freshly grated nutmeg
  • ½ cup panko breadcrumbs (optional, for topping)

Instructions

  • Preheat oven to 375°F (190°C).
  • Cook pasta al dente according to package directions; drain and set aside.
  • Melt butter in a large pot over medium heat, then whisk in flour to form a roux. Cook for 1-2 minutes.
  • Gradually whisk in milk and cream until thickened and simmering.
  • Remove from heat, stir in goat cheese, cheddar, Gruyere, salt, pepper, and nutmeg until melted and smooth.
