Ingredients
- 1.5 lbs ground chicken (93% lean recommended)
- 1 small yellow onion, finely grated
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh mint, finely chopped (optional, but recommended)
- 1 large egg
- 1/4 cup plain breadcrumbs (panko or regular)
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- Pinch of cayenne pepper (optional)
- 1 tbsp olive oil (plus more for cooking)
- Wooden or metal skewers
Instructions
- 1. Prepare Ingredients: Finely grate the onion, mince garlic, and chop herbs. In a large bowl, combine ground chicken, grated onion, minced garlic, chopped parsley and mint, egg, breadcrumbs, cumin, paprika, salt, pepper, cayenne (if using), and olive oil.
- 2. Mix Gently: Using clean hands, gently mix the ingredients until just combined. Be careful not to overmix, as this can make the kabobs tough.
- 3. Form Kabobs: Take about 2-3 tablespoons of the mixture and form it around each skewer into an elongated shape, about 4-5 inches long and 1 inch thick. Ensure they are firmly attached.
- Grill: Preheat to medium-high (400°F/200°C), oil grates. Grill 3-5 minutes per side, 12-15 minutes total, until internal temperature reaches 165°F (74°C).
- Oven: Preheat to 400°F (200°C). Place on a greased baking sheet. Bake 18-25 minutes, flipping halfway, until golden and cooked through.
- Pan-Fry: Heat olive oil in a skillet over medium-high heat. Cook 3-4 minutes per side, rotating until all sides are browned and kabobs are cooked through.
- 5. Rest and Serve: Remove kabobs from heat and let them rest for 5 minutes, tented with foil, before serving.
