Ingredients
- 1 tbsp olive oil
- 1 lb ground beef (80/20 recommended)
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth, low sodium
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp paprika (smoked or sweet)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz wide egg noodles
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Brown the Beef & Aromatics: In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add ground beef and cook, breaking it apart, until no pink remains. Drain excess grease. Add chopped onion and minced garlic; sauté for 3-5 minutes until softened and fragrant.
- Deglaze and Build the Sauce Base: Pour in beef broth, Worcestershire sauce, and Dijon mustard. Scrape up any browned bits from the bottom of the pan. Stir in paprika, salt, and black pepper. Bring to a gentle simmer.
- Simmer the Noodles: Add egg noodles to the simmering broth, ensuring they are mostly submerged. Reduce heat to medium-low, cover, and simmer for 8-10 minutes, or until noodles are tender-crisp. Stir occasionally.
- Stir in Creamy Elements: Remove from heat. Stir in softened cream cheese until melted and smooth. Gently fold in sour cream until fully combined. Do not boil after adding sour cream.
- Serve Immediately: Taste and adjust seasonings if needed. Garnish with fresh parsley if desired and serve hot.
