Ingredients
- 1.5 lbs (680g) 93/7 ground turkey
- 2 tsp dried sage
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp red pepper flakes (optional, for heat)
- 1 tsp sea salt (or to taste)
- 1/2 tsp black pepper (freshly ground)
- 2 tbsp unsweetened applesauce (or finely grated apple)
- 1 tsp apple cider vinegar
- 1 large egg white (or 2 tbsp oat flour for binder)
- 1 tbsp olive oil (for cooking, optional)
Instructions
- 1. Prepare Ingredients: Gather all your ingredients. In a large mixing bowl, gently break up the ground turkey.
- 2. Combine Seasonings: Add the dried sage, dried thyme, smoked paprika, garlic powder, onion powder, red pepper flakes (if using), salt, and black pepper to the bowl with the turkey.
- 3. Add Moisture & Binder: Pour in the unsweetened applesauce (or add grated apple), apple cider vinegar, and the egg white (or oat flour).
- 4. Gentle Mixing: With clean hands, gently mix all ingredients until just combined. Be careful not to overmix, as this can make the sausage tough.
- 5. Form Patties: Divide the mixture into 8-10 equal portions and gently form them into 1/2-inch thick patties. Alternatively, you can use the mixture as crumbles.
- 6. Cook: Heat 1 tbsp of olive oil in a large non-stick skillet over medium heat. Cook patties for 4-6 minutes per side, until golden brown and cooked through (internal temperature 165°F). For crumbles, cook in a skillet for 5-7 minutes, breaking them up as they brown.
- 7. Serve: Serve your delicious, healthy turkey sausage immediately, or store for later.
