- 1/4 cup melted coconut oil (or light olive oil)
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 large egg (or 1 flax egg for egg-free)
- 1 cup whole wheat flour (or all-purpose flour)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp ground cinnamon (optional)
- Pinch of salt
- For the Frosting:
- 4 oz full-fat cream cheese, softened
- 1/2 cup full-fat plain Greek yogurt
- 1/2 tsp vanilla extract (optional)
- 1 tsp maple syrup (optional, for slightly sweeter frosting)
Instructions
- 1. Prepare Your Pan and Preheat Oven: Preheat oven to 350°F (175°C). Grease and flour a 6-inch round cake pan.
- 2. Mix Wet Ingredients: In a large bowl, mash bananas. Whisk in applesauce, coconut oil, maple syrup, vanilla, and egg until combined.
- 3. Combine Dry and Wet: In a separate bowl, whisk flour, baking powder, baking soda, cinnamon (if using), and salt. Gradually add to wet ingredients, mixing until just combined.
- 4. Bake Cake: Pour batter into the prepared pan. Bake for 25-30 minutes, or until a wooden skewer comes out clean. Cool in pan for 10 mins, then invert onto a wire rack to cool completely.
- 5. Make Frosting: While cake cools, beat softened cream cheese and Greek yogurt until smooth. Add vanilla and optional maple syrup.
- 6. Assemble and Decorate: Once cake is completely cool, frost generously. Decorate with fresh fruit or other baby-friendly toppings.
