Ingredients
- 1.5 lbs boneless, skinless chicken breast, diced into 1-inch pieces
- 1 head broccoli, cut into florets
- 2 carrots, thinly sliced or julienned
- 1 medium onion, cut into 1-inch pieces
- 1 medium zucchini, quartered lengthwise and sliced
- 2 tbsp avocado oil, divided
- 1 tsp toasted sesame oil
- For the Hibachi Sauce:
- 1/2 cup low-sodium soy sauce
- 2 tbsp mirin
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tsp brown sugar (optional, to taste)
- Optional garnish: Sesame seeds, sliced green onions
Instructions
- Step 1: Prepare All Ingredients. Dice chicken and chop all vegetables. Mince ginger and garlic. Whisk together all sauce ingredients in a small bowl. This mise en place is key for high-heat cooking.
- Step 2: Sear the Chicken. Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and sear for 2-3 minutes per side until golden brown and mostly cooked through. Remove and set aside.
- Step 3: Sauté the Vegetables. Add the remaining 1 tablespoon of avocado oil to the pan. Add carrots and broccoli; sauté for 3-4 minutes. Add onions and zucchini; sauté for another 2-3 minutes until tender-crisp.
- Step 4: Add the Sauce. Push vegetables to one side of the pan. Pour the prepared hibachi sauce into the cleared space. Let it simmer for 30-60 seconds, stirring until slightly thickened and fragrant.
- Step 5: Combine and Finish. Return the cooked chicken to the pan. Toss chicken and vegetables with the sauce until everything is evenly coated and heated through, about 1-2 minutes. Stir in the toasted sesame oil.
- Step 6: Serve. Garnish with sesame seeds and green onions if desired. Serve immediately with your choice of rice or other sides.
