Ingredients

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp low-sodium soy sauce (plus 2 tbsp for sauce)
  • 1 tsp sesame oil (plus 1 tsp for sauce)
  • 1 tbsp cornstarch (plus 1 tbsp for slurry)
  • 2 tbsp vegetable oil, divided
  • 3 cloves garlic, minced
  • 1-inch fresh ginger, grated
  • 1/2 cup hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp brown sugar or honey
  • 1/4 cup water or beef broth
  • 1/2 cup sliced bell peppers (optional)
  • 1/2 cup snap peas (optional)
  • Green onions, sliced, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions

  • Marinate the Beef: In a bowl, combine sliced beef with 1 tbsp soy sauce, 1 tsp sesame oil, and 1 tbsp cornstarch. Mix well and marinate for 15 minutes at room temperature.
  • Sear the Beef: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add half of the marinated beef in a single layer and sear for 1-2 minutes per side until browned. Remove to a plate. Repeat with remaining beef and 1 tbsp oil.
  • Build the Sauce: In the same skillet, add minced garlic and grated ginger. Sauté for 30 seconds until fragrant. Stir in hoisin sauce, 2 tbsp soy sauce, rice vinegar, brown sugar, and water/broth. Bring to a simmer.
  • Thicken and Combine: Whisk 1 tbsp cornstarch with 2 tbsp cold water to create a slurry. Slowly pour into the simmering sauce, stirring until thickened and glossy.
  • Finish: Return seared beef (and any juices) to the skillet. Add optional bell peppers and snap peas. Toss to coat and cook for 1-2 minutes until beef is heated through and vegetables are crisp-tender.
  • Serve: Garnish with sliced green onions and sesame seeds, if desired. Serve immediately with rice or noodles.
