Ingredients

  • 1.52 lbs lean pork loin or boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 large egg white
  • 1/4 cup plain breadcrumbs
  • 1.5 tsp fine sea salt (or kosher salt)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried herbs (e.g., oregano, thyme, Italian blend)
  • 1/2 tsp black pepper
  • Optional: finely chopped jalapeños, shredded cheese, sun-dried tomatoes

Instructions

  • 1. Prep the Meat: Grind the meat twice using a meat grinder, or pulse in a food processor until very finely minced (almost a paste-like consistency).
  • 2. Combine Ingredients: In a large bowl, combine the finely ground meat with egg white, breadcrumbs, salt, garlic powder, onion powder, smoked paprika, dried herbs, and black pepper. Mix thoroughly with your hands until well combined and cohesive.
  • 3. Form the Loaf: Lightly grease a standard loaf pan (8.5 x 4.5 or 9 x 5 inches). Press the meat mixture firmly and evenly into the pan, smoothing the top.
  • 4. Bake to Perfection: Preheat oven to 325°F (160°C). Bake for 60-75 minutes, or until an internal temperature of 160°F (71°C) for pork or 165°F (74°C) for chicken is reached.
  • 5. Cool Completely & Chill: Remove from oven and let cool in the pan for 15-20 minutes. Invert onto a wire rack to cool completely to room temperature. Once cool, wrap tightly in plastic wrap and refrigerate for at least 4 hours, or ideally overnight, before slicing.
