Ingredients

  • 1 tablespoon fresh ginger, finely grated
  • 1/4 cup honey
  • 1/4 cup rice vinegar (unseasoned)
  • 1 tablespoon low-sodium soy sauce (or tamari for gluten-free)
  • 1 teaspoon toasted sesame oil
  • 1/2 cup neutral oil (canola, grapeseed, or avocado)
  • Optional: pinch of salt or red pepper flakes to taste

Instructions

  • Prep Ginger: Peel and finely grate the fresh ginger using a microplane or fine grater.
  • Combine Wet Ingredients: In a small bowl or a jar with a tight-fitting lid, combine the grated ginger, honey, rice vinegar, soy sauce, and toasted sesame oil.
  • Emulsify: Slowly whisk in the neutral oil until well combined and slightly thickened. If using a jar, cover tightly and shake vigorously for 30-60 seconds until emulsified.
  • Taste & Adjust: Taste the dressing and adjust sweetness (more honey) or tang (more rice vinegar) as desired. Add a pinch of salt or red pepper flakes if you like.
