Ingredients
- 1 tablespoon fresh ginger, finely grated
- 1/4 cup honey
- 1/4 cup rice vinegar (unseasoned)
- 1 tablespoon low-sodium soy sauce (or tamari for gluten-free)
- 1 teaspoon toasted sesame oil
- 1/2 cup neutral oil (canola, grapeseed, or avocado)
- Optional: pinch of salt or red pepper flakes to taste
Instructions
- Prep Ginger: Peel and finely grate the fresh ginger using a microplane or fine grater.
- Combine Wet Ingredients: In a small bowl or a jar with a tight-fitting lid, combine the grated ginger, honey, rice vinegar, soy sauce, and toasted sesame oil.
- Emulsify: Slowly whisk in the neutral oil until well combined and slightly thickened. If using a jar, cover tightly and shake vigorously for 30-60 seconds until emulsified.
- Taste & Adjust: Taste the dressing and adjust sweetness (more honey) or tang (more rice vinegar) as desired. Add a pinch of salt or red pepper flakes if you like.
- Serve & Store: Use immediately or store in the refrigerator in an airtight container for up to 5-7 days. Shake well before each use.
