Ingredients

  • 2 cups unsweetened original almond milk
  • 2 tablespoons unsweetened cocoa powder (preferably Dutch-processed)
  • 23 tablespoons granulated sugar (or maple syrup/agave to taste)
  • 1/8 teaspoon salt
  • 2 ounces dairy-free dark chocolate, chopped (70% cacao or higher)
  • 1/2 teaspoon pure vanilla extract (optional)
  • Pinch of ground cinnamon or cayenne pepper (optional)

Instructions

  • In a medium saucepan, whisk together the cocoa powder, sugar, and salt (and optional spices).
  • Pour in about 1/2 cup of almond milk and whisk thoroughly to form a smooth paste, eliminating any lumps.
  • Gradually whisk in the remaining almond milk until fully combined.
  • Place the saucepan over medium-low heat. Stir frequently, warming the mixture until it’s steamy but not boiling.
  • Add the chopped dark chocolate and continue stirring until it is completely melted and smooth.
  • Reduce heat to low and gently simmer for 2-3 minutes, stirring occasionally, until it reaches your desired consistency. Stir in vanilla extract, if using.
