Ingredients
- 2 cups unsweetened original almond milk
- 2 tablespoons unsweetened cocoa powder (preferably Dutch-processed)
- 2–3 tablespoons granulated sugar (or maple syrup/agave to taste)
- 1/8 teaspoon salt
- 2 ounces dairy-free dark chocolate, chopped (70% cacao or higher)
- 1/2 teaspoon pure vanilla extract (optional)
- Pinch of ground cinnamon or cayenne pepper (optional)
Instructions
- In a medium saucepan, whisk together the cocoa powder, sugar, and salt (and optional spices).
- Pour in about 1/2 cup of almond milk and whisk thoroughly to form a smooth paste, eliminating any lumps.
- Gradually whisk in the remaining almond milk until fully combined.
- Place the saucepan over medium-low heat. Stir frequently, warming the mixture until it’s steamy but not boiling.
- Add the chopped dark chocolate and continue stirring until it is completely melted and smooth.
- Reduce heat to low and gently simmer for 2-3 minutes, stirring occasionally, until it reaches your desired consistency. Stir in vanilla extract, if using.
- Pour into mugs and serve immediately with your favorite toppings.
