Ingredients

  • 23 lbs boneless chuck steak (11.5 inches thick)
  • 2 tbsp high-smoke point oil (e.g., avocado, grapeseed)
  • 1 large yellow onion, roughly chopped
  • 45 cloves garlic, minced
  • 34 cups beef broth (or a mix of beef broth and dry red wine)
  • 2 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 tsp salt, or to taste
  • 1 tsp black pepper, or to taste
  • 12 tbsp steak rub (optional)
  • Optional: 2-3 carrots, cut into large chunks
  • Optional: 2-3 potatoes, cut into large chunks

Instructions

  • 1. Prep and Season Steak: Remove chuck steak from the fridge 30-60 minutes before cooking. Pat dry thoroughly with paper towels. Season generously on all sides with salt, pepper, and steak rub.
  • 2. Sear the Steak: Heat oil in a heavy-bottomed Dutch oven or oven-safe pot over medium-high heat until shimmering. Sear steak for 3-5 minutes per side until a deep brown crust forms. Remove steak and set aside.
  • 3. Sauté Aromatics: Reduce heat to medium. Add onion to the pot and sauté for 5-7 minutes until softened. Add garlic and cook for 1 minute until fragrant.
  • 4. Deglaze and Build Liquid: Pour in 1/2 cup of broth/wine, scraping up any browned bits from the bottom of the pot. Return steak to the pot, add fresh herbs, and pour in remaining liquid until it comes halfway up the sides of the steak. Bring to a gentle simmer on the stovetop.
  • 5. Oven Braise: Preheat oven to 300°F (150°C). Cover the Dutch oven tightly and transfer to the preheated oven. Braise for 2.5 to 3.5 hours, or until the steak is fork-tender. If adding optional root vegetables, add them during the last hour of braising.
  • 6. Rest and Serve: Remove from oven. Transfer steak to a cutting board, tent with foil, and let rest for 15-20 minutes. Skim fat from braising liquid if desired. Slice or shred the steak and serve with the pan juices and vegetables.
