This recipe transforms a classic comfort food into a vibrant, nutrient-dense, and incredibly flavorful meal. It features perfectly tender chicken and fluffy whole grain rice, all cooked conveniently in one pan.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1.5 lbs total), or 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil, plus more if needed
  • Salt and freshly ground black pepper, to taste
  • 1 yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 cup brown rice, uncooked
  • 2 cups low-sodium chicken broth
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • 1. Prep Ingredients: Pat chicken dry and season with salt and pepper. Dice onion, carrots, celery. Mince garlic.
  • 2. Sear Chicken: Heat 1 tbsp olive oil in a large, oven-safe skillet over medium-high heat. Sear chicken 3-4 minutes per side until golden; set aside.
  • 3. Sauté Aromatics: Reduce heat to medium. Add a splash more oil if needed. Sauté onion, carrots, celery for 5-7 minutes. Add garlic, thyme, rosemary; cook 1 minute until fragrant.
  • 4. Add Rice & Broth: Stir in brown rice; toast 1-2 minutes. Pour in chicken broth, stir well. Nestle chicken back into the rice mixture.
  • 5. Simmer & Finish: Cover tightly, reduce heat to low, and simmer for 25-30 minutes, or until rice is tender and liquid is absorbed. Chicken should reach 165°F (74°C). Remove from heat, rest 5-10 minutes covered. Fluff rice, slice chicken, and garnish with parsley.
