Ingredients
- 2 (6-ounce) salmon fillets, skin on or off
- 1–2 tablespoons olive oil
- 1/2 teaspoon coarse sea salt (or to taste)
- 1/4 teaspoon freshly ground black pepper (or to taste)
- 1 fresh lemon, cut into wedges
- 2 tablespoons fresh dill, chopped
- Optional: 1 tablespoon fresh parsley or chives, chopped
Instructions
- Remove salmon from the refrigerator 15-20 minutes before cooking. Pat fillets thoroughly dry with paper towels.
- Brush salmon with olive oil and season generously with salt and pepper on both sides.
- Heat a heavy-bottomed, oven-safe skillet over medium-high heat until shimmering. Add 1-2 tablespoons olive oil.
- Place salmon skin-side down in the hot pan. Press gently for 30 seconds. Sear for 4-6 minutes until skin is crispy and golden.
- Flip salmon to the flesh side. Cook for another 2-5 minutes, or until internal temperature reaches 125-140°F (52-60°C) for desired doneness.
- Remove from pan, tent with foil, and let rest for 5 minutes. Serve with fresh lemon wedges and chopped herbs.
