Ingredients
- Gluten-Free Fish Sauce: Essential for savory depth.
- Gluten-Free Tamari / Coconut Aminos: For umami without the wheat.
- Rice Noodles: Various types for different dishes, naturally GF.
- Coconut Milk (full-fat): For richness in curries and soups.
- Fresh Aromatics: Galangal, lemongrass, kaffir lime leaves, chilies, garlic, shallots.
- Fresh Lime Juice: For brightness and sour balance.
- Palm Sugar: Traditional sweetener.
- Assorted Vegetables: Your choice of fresh, crisp veggies.
- Protein: Chicken, shrimp, tofu, or beef.
- Tamarind Paste (pure pulp): For sour tang in dishes like Pad Thai.
- Cooking Oil (high smoke point): Avocado, grapeseed, or coconut oil.
Instructions
- 1. Prep All Ingredients (Mise en Place): Chop, mince, slice, and measure everything before cooking. Soak rice noodles in hot water until al dente; drain well.
- 2. Heat Wok/Skillet: Heat a wok or large skillet over high heat with oil until smoking.
- 3. Sauté Aromatics: Add garlic, shallots, chilies, galangal, lemongrass, and stir-fry until fragrant (30-60 seconds).
- 4. Cook Protein & Vegetables: Add protein and stir-fry until cooked through. Add harder vegetables, then softer ones, cooking until tender-crisp. Don’t overcrowd the pan; cook in batches if necessary.
- 5. Add Sauce & Noodles: Pour in your prepared gluten-free sauce mixture (fish sauce, tamari, lime juice, palm sugar, tamarind paste). Add pre-soaked rice noodles. Toss vigorously to coat all ingredients and allow the sauce to reduce slightly.
- 6. Finish & Serve: If using coconut milk, stir in and heat through gently. Taste and adjust seasonings. Remove from heat, squeeze fresh lime juice, and garnish with fresh herbs like cilantro or Thai basil. Serve immediately.
