Ingredients
- 2 cups old-fashioned rolled oats (certified gluten-free if needed)
- ½ cup ground flaxseed
- ¼ cup brewer’s yeast (food-grade, unfortified)
- ¾ cup natural nut butter (peanut, almond, or cashew)
- ½ cup maple syrup or honey (adjust to taste)
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- ½ cup chocolate chips or chopped dried fruit (or a mix)
Instructions
- Prepare Your Workspace: Line a baking sheet or large plate with parchment paper.
- Combine Dry Ingredients: In a large bowl, whisk together oats, ground flaxseed, and brewer’s yeast.
- Mix Wet Ingredients: In a separate microwave-safe bowl, combine nut butter, maple syrup/honey, melted coconut oil, and vanilla extract. Microwave for 15-30 seconds until warm and smooth, stirring well.
- Combine All Ingredients: Pour the wet mixture into the dry ingredients. Mix until well combined and sticky. Fold in chocolate chips or dried fruit.
- Form the Bites: Roll the mixture into 1 to 1.5-inch balls and place them on the prepared baking sheet.
- Chill to Set: Refrigerate for at least 30 minutes (or freeze for 15 minutes) until firm.
