Ingredients

  • 2 cups rolled oats
  • 1/2 cup ground flaxseed
  • 1/4 cup brewer’s yeast (debittered)
  • 1/2 cup vanilla protein powder
  • 1 cup natural peanut butter (or other nut butter)
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips (optional)

Instructions

  • In a large bowl, combine oats, ground flaxseed, brewer’s yeast, and protein powder. Mix well.
  • Add peanut butter, honey/maple syrup, and vanilla extract to the dry ingredients. Mix with a sturdy spoon until a thick, cohesive dough forms. Stir in chocolate chips, if using.
  • Scoop about 1-1.5 tablespoons of the mixture and roll into smooth balls.
  • Place the balls on a parchment-lined plate or baking sheet.
  • Refrigerate for at least 30 minutes to firm up before serving.
