Ingredients

  • 6 oz sushi-grade Ahi tuna (or cooked shrimp/firm tofu), cubed
  • 1 cup cooked cauliflower rice (or quinoa/brown rice)
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup shredded carrots
  • 1/4 cup shelled edamame
  • 2 radishes, thinly sliced
  • 1/4 avocado, thinly sliced (optional, for healthy fats)
  • 2 tbsp low-sodium soy sauce (or tamari)
  • 1 tbsp rice vinegar
  • 1/2 tsp sesame oil
  • 1 tsp honey or maple syrup
  • 1/2 tsp fresh grated ginger
  • 1 clove garlic, minced
  • 1 tsp lime juice
  • 1 tbsp green onions, thinly sliced, for garnish
  • 1/2 tsp sesame seeds, for garnish
  • Pinch of chili flakes (optional)

Instructions

  • Prepare Protein: Cube Ahi tuna (or prepare shrimp/tofu). Lightly marinate with 1 tbsp soy sauce and a pinch of ginger for 10-15 minutes.
  • Cook Base: Prepare cauliflower rice (sauté or microwave) or cook quinoa/brown rice as directed. Allow to cool.
  • Chop Veggies: Thinly slice cucumber, carrots, radishes, and any other desired vegetables.
  • Whisk Dressing: In a small bowl, combine remaining soy sauce, rice vinegar, sesame oil, honey/maple syrup, grated ginger, minced garlic, and lime juice. Whisk well.
  • Assemble Bowl: Place cooled base in a wide bowl. Arrange protein, chopped vegetables, and avocado (if using) artfully over the base.
  • Dress & Garnish: Drizzle dressing over the bowl. Garnish with green onions, sesame seeds, and chili flakes. Serve immediately.
