Ingredients
- 1 ¾ cups (210g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 3–4 very ripe large bananas, mashed (about 1 ½ cups)
- ½ cup (113g) unsalted butter, melted
- ½ cup (100g) light or dark brown sugar, packed
- 2 large eggs, room temperature
- ½ cup (120g) plain Greek yogurt, room temperature
- 1 teaspoon pure vanilla extract
- Optional: ½ cup chocolate chips, chopped nuts, or dried fruit
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
- Combine Wet Ingredients: In a large bowl, mash ripe bananas. Add melted butter, brown sugar, eggs, Greek yogurt, and vanilla extract. Whisk until well combined.
- Mix Wet & Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in optional add-ins if desired.
- Bake: Pour batter into the prepared loaf pan. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Cool: Let the loaf cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing and serving.
