Ingredients
- 1 cup creamy almond butter (or other nut/seed butter)
- 1/2 cup maple syrup (or honey)
- 1 tsp vanilla extract
- 1/2 cup chopped almonds
- 1/2 cup chopped pecans
- 1/4 cup pumpkin seeds
- 1/2 tsp ground cinnamon
- Optional: 1/4 cup paleo chocolate chips or unsweetened dried fruit
- Pinch of sea salt (optional, balances sweetness)
Instructions
- Preheat oven to 325°F (160°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang. Lightly grease.
- In a large bowl, whisk together almond butter, maple syrup, and vanilla extract until smooth.
- In a separate bowl, combine chopped almonds, pecans, pumpkin seeds, cinnamon, and optional chocolate chips/dried fruit and sea salt.
- Add the dry mixture to the wet mixture and stir with a sturdy spatula until all ingredients are well coated and combined.
- Transfer the mixture to the prepared baking pan. Press down firmly and evenly using a spatula or your hands until compact and flat.
- Bake for 20-25 minutes, or until the edges are lightly golden brown and the center is set.
- Remove from oven and let cool completely in the pan on a wire rack. This is crucial for proper setting.
- Once completely cool (or chilled in the fridge for 30 minutes), use the parchment paper to lift the bars out of the pan. Slice into 12 bars.
- Store in an airtight container at room temperature for up to 3-4 days, or refrigerate for longer freshness.
