Ingredients
- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 lb fresh green beans, trimmed
- 2 tbsp soy sauce (plus 1 tbsp for marinade)
- 2 tbsp oyster sauce
- 1 tbsp cornstarch (plus 1 tsp for marinade)
- 1 tsp toasted sesame oil (plus 1 tsp for marinade)
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp vegetable oil, divided
- Optional: Steamed rice for serving
Instructions
- 1. Marinate Chicken: In a bowl, combine chicken with 1 tbsp soy sauce, 1 tsp cornstarch, and 1 tsp sesame oil. Mix well and let marinate for 15 minutes.
- 2. Blanch Green Beans: Boil green beans for 2-3 minutes until crisp-tender. Drain and immediately transfer to an ice bath, then drain thoroughly and pat dry.
- 3. Cook Chicken: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and cook until golden brown and cooked through, about 3-4 minutes per side. Remove and set aside.
- 4. Make Sauce: In the same skillet, add 1 tbsp vegetable oil, minced garlic, and ginger. Sauté for 30 seconds until fragrant. Whisk together remaining 2 tbsp soy sauce, oyster sauce, 1 tbsp cornstarch, and chicken broth. Pour into skillet, bring to a simmer, and cook until thickened and glossy (1-2 minutes).
- 5. Combine & Serve: Return cooked chicken and blanched green beans to the skillet with the sauce. Toss to coat and heat through for 1-2 minutes. Serve immediately over steamed rice.
