- 2 cups granulated sugar, plus more for coating
- 1/2 cup light corn syrup
- 1/4 cup reserved peach-infused water (from rehydrating)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon peach extract (optional)
Instructions
- Step 1: Rehydrate Peaches. Place dried peach rings in a saucepan, cover with water, and simmer for 15-20 minutes until softened. Drain, reserving 1/4 cup of the liquid. Set peaches aside.
- Step 2: Make Syrup. In the same saucepan, combine granulated sugar, corn syrup, reserved peach water, and lemon juice. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Step 3: Infuse Flavor. Add rehydrated peaches to the syrup. Simmer gently for 20-30 minutes, stirring occasionally, until peaches are translucent. Stir in peach extract, if using, during the last 5 minutes.
