Ingredients
- 2–3 lb boneless pork loin roast, trimmed
- 1/2 cup soy sauce (or tamari for GF)
- 1/2 cup packed light brown sugar
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/2 small onion, finely diced (optional)
- 2 tbsp cornstarch
- 3 tbsp cold water
- Salt and black pepper to taste
- 1 tbsp vegetable oil (for optional searing)
- Optional garnishes: sesame seeds, sliced green onions
Instructions
- Prep the Pork Loin: Pat pork loin dry, season with salt and pepper. Optionally, sear in a hot skillet for 2-3 minutes per side until browned. Place pork in the crock pot.
- Whisk the Sauce: In a bowl, combine soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and diced onion. Whisk until sugar is dissolved.
- Combine & Cook: Pour sauce over pork in the crock pot. Cook on LOW for 4-6 hours or HIGH for 2-3 hours, until pork is tender.
- Thicken the Sauce: Remove pork, tent with foil. Whisk cornstarch and cold water to make a slurry. Stir slurry into hot sauce in crock pot. Cook on HIGH for 15-20 minutes, stirring, until thickened to a glaze.
- Serve Immediately: Shred or slice pork. Return to crock pot, toss with thickened sauce. Garnish and serve hot with desired sides.
