  • Total Time: 45 minutes
  • Yield: 6-8 servings

Description

This comforting ravioli soup with sausage is a hearty, flavorful meal that comes together quickly. Perfect for busy weeknights, it’s packed with savory goodness and tender pasta.

Ingredients

  • 1 tbsp olive oil
  • 1 lb bulk Italian sausage (mild or spicy)
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 6 cups low-sodium chicken or vegetable broth
  • 1 (28 oz) can crushed tomatoes
  • 1 (20 oz) package fresh or frozen cheese ravioli (or your preferred filling)
  • 5 oz fresh baby spinach
  • Salt and freshly ground black pepper to taste
  • Freshly grated Parmesan cheese, for serving
  • Fresh basil or parsley, chopped, for garnish

Instructions

  • Brown Sausage & Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until no longer pink and browned. Drain excess fat, leaving about 1-2 tablespoons. Add chopped onion and celery, sauté until softened (5-7 mins). Stir in minced garlic and Italian seasoning; cook 1 minute until fragrant.
  • Deglaze & Build Broth: Pour in a splash of broth to deglaze the pot, scraping up any browned bits. Add crushed tomatoes and remaining broth. Bring to a gentle simmer.
  • Simmer for Flavor: Reduce heat to low, cover, and simmer for 15-20 minutes to allow flavors to meld. Season with salt and pepper to taste.
  • Add Ravioli: Increase heat to medium-low. Add ravioli and cook according to package directions (3-8 minutes), until tender.
  • Stir in Spinach & Serve: Stir in fresh spinach and cook for 1-2 minutes, until wilted. Taste and adjust seasonings. Ladle into bowls, garnish with Parmesan and fresh herbs, and serve hot.
