Ingredients
- 4 (6 oz) salmon fillets, skin-on or skinless
- 1 tbsp olive oil or butter
- 3–4 cloves garlic, minced
- 5 oz fresh spinach
- 4 oz cream cheese, softened
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese, plus more for garnish
- 1/4 tsp ground nutmeg
- Salt and freshly ground black pepper, to taste
- 1 tbsp fresh lemon juice
Instructions
- Preheat oven to 400°F (200°C). Pat salmon fillets dry and season generously with salt and pepper.
- In a large skillet, heat olive oil or butter over medium heat. Sauté minced garlic for 30 seconds until fragrant. Add spinach and cook until wilted, then remove from heat and squeeze out excess liquid.
- Return skillet to medium-low heat. Add heavy cream, softened cream cheese, and Parmesan. Stir until smooth and creamy. Stir in wilted spinach, nutmeg, salt, and pepper.
- Spread half the sauce in a baking dish. Place salmon fillets on top, then cover with remaining sauce.
- Bake for 12-18 minutes, or until salmon is cooked through and flakes easily. Squeeze fresh lemon juice over the top before serving.
