Ingredients
- 2 large Sweet Potatoes (Garnet or Jewel recommended), 1/2 to 3/4-inch diced
- 2 tbsp Avocado Oil (or olive oil)
- 1/2 medium Yellow Onion, diced
- 2 cloves Garlic, minced
- 1/2 tsp Salt (or to taste)
- 1/4 tsp Black Pepper (or to taste)
- Optional: Pinch of smoked paprika, cayenne pepper, or fresh herbs (parsley, thyme)
Instructions
- Wash, peel, and dice sweet potatoes into 1/2 to 3/4-inch cubes. Ensure consistent size for even cooking.
- Heat a large, heavy-bottomed skillet over medium-high heat. Add oil and allow it to shimmer.
- Add diced sweet potatoes to the hot pan in a single layer (work in batches if necessary to avoid overcrowding). Cook undisturbed for 3-5 minutes until golden brown on one side.
- Toss and continue cooking, stirring occasionally, for 10-15 minutes, until tender and caramelized.
- Push sweet potatoes to one side (or remove). Add diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for 30-60 seconds until fragrant.
- Return sweet potatoes (if removed) to the center, or mix everything together. Season with salt, pepper, and any optional spices. Stir to combine.
- Cook for another 1-2 minutes to meld flavors. Taste and adjust seasoning. Serve immediately, garnished with fresh herbs if desired.
